With its gentle, light-purple flowers, honeydew flower is a medicinal herb that grows wild in the desert. It is rare worldwide, growing only in the Bashkiria region of Uzbekistan, Kazakhstan, and Russia. Flowering lasts only four days in May and June. It continues to produce nectar even in severe droughts. The roots and fruits have been used in medicine and natural remedies for over a thousand years. Akkuray honey is an ancient masterpiece of nature, concentrating the life force of the Akkuray tree, which grows vigorously in a harsh environment.

Characteristics

Basically white honey, but it turns slightly yellowish depending on the amount of precipitation and other weather conditions at the time of flowering. It does not thicken much, and has a crunchy texture like rough rice. When mixed with a spoon, it becomes as smooth as syrup. It is almost scentless, but the taste is rich and leaves a faint floral flavor in the mouth. It is a low acid honey.
